Food Safety Alerts and Tips

pressure testing

If you are pressure canning and using a dial gauge, you will need to have it checked yearly to ensure accuracy before use.  This is important because gauges that read high can cause under-processing resulting in unsafe food.  Low reading gauges can cause over-processing, resulting in lower quality or mush food.

Weighted gauges do not require testing.  Instead they should gently rock or making jiggling noise that indicates correct pressure.  To know how your weighted gauge should rock or jiggle, check your manufacturer's instructions.
